For quick summer cakes in midsummer, the strategy is crucial: we minimize the heat in the kitchen, i.e. the baking time, and maximize the stability. The most effective recipes use either no-bake bases or quick sponge bases, combined with light, gelatin-free creams. Local fruit not only has the best flavor in summer, but thanks to the short transport routes it also ensures the necessary freshness in the cake display case. We differentiate between the different months here:

#1 June: The start of the berry season

June is all about the first sweet signs of summer.

  • Sweet & sour cherries: Perfect for the classic Danube wave or cherry crumble cake.

#2 July: The fullness of midsummer

The diversity reaches its peak in July. Now is the best time for mixed berry cakes.

  • Apricots & Peaches: Bring Mediterranean flair to the garden.
  • Gooseberries: Often underestimated, but brilliant in combination with a fine meringue or cream layer.

#3 August: Late summer & stone fruit

As the days slowly become shorter, the fruit selection changes to more substantial varieties.

  • Plums & plums: Ring in late summer (ideal as a sheet cake with yeast dough).
  • Mirabelle plums: Small, sweet highlights that look great on a sour cream cake.
  • Blackberries: Now reach their full aroma and go perfectly with dark chocolate bases.

Which summer cakes are easy to prepare?

Fridge cakes based on biscuit base are particularly easy to prepare as they set overnight in the fridge and fully develop their aroma. Classic sour cream or yoghurt cakes also gain stability through a longer resting time, while fruit cakes with icing become juicier as they are absorbed into the base. Frozen ice cream cakes or semifreddo variants can even be made days in advance and only need to thaw briefly before serving.
