Ingredients

for 8 servings

For the yeast dough

  • 300 g Viennese semolina

  • 0.5 cube fresh yeast (21 g)

  • 40g sugar

  • 130 ml lukewarm milk

  • 1 egg yolk

  • 50 g soft butter

  • pinch of salt

  • 0.25 tsp grated organic lemon peel

  • Flour for the work surface

For the sprinkles

  • 130 g cold butter

  • 75g sugar

  • 150g flour

Besides that

  • 200 g red currants

  • 100g powdered sugar

  • 1 tbsp lemon juice

preparation

  1. Place flour in a large bowl and make a well in it. Crumble in the yeast and mix with sugar, lukewarm milk and a little flour. Cover and let rise in a warm place for 10 minutes.
  2. Add the egg yolk, soft butter, a pinch of salt and lemon peel and knead everything into a smooth yeast dough using the dough hook of the hand mixer. Cover and let rise in a warm place for about 1 hour.
  3. For the streusel, knead the butter in flakes with the sugar and flour by hand to form streusel and refrigerate. Wash the currants, strip them from the stems, drain well and sort.
  4. Divide the dough into 8 equal pieces on the floured work surface, form into balls and roll out into round balls (10-12 cm in diameter). Spread the currants and crumbles on top and bake in a preheated oven at 160 °C for approx. 25 minutes. Remove and let cool.
  5. Mix the sifted powdered sugar with the lemon juice to form a thick icing and drizzle the streusel thalers with it.
