Ingredients

for 8 servings

For the danish:

  • 400 ml milk

  • 60g sugar

  • 1 packet vanilla pudding powder (for cooking)

  • 1 croissant/Danish dough (400 g; finished product, from the refrigerated shelf)

For the topping:

  • 200g strawberries

  • 1 pack of cake icing

  • 250 ml red grape juice

  • 2 tbsp sugar

  • 3 stalks of lemon balm

  • 1 tbsp chopped pistachios

preparation

  1. Mix 3 tablespoons of milk with the sugar and pudding powder until smooth. Bring the remaining milk to the boil, stir in the mixed pudding powder and bring to the boil again. Cover the pudding with cling film so that no skin forms and let it cool.
  2. Preheat the oven to 200°C. Unroll the pastry dough with the baking paper on a baking tray and cut into eighths to create equal-sized rectangles. Roll the edges up a little and brush lightly with water. Place the pudding in the middle of the dough and bake in the oven for 15-20 minutes until golden. Then let it cool on a cake rack.
  3. Wash, clean, quarter the strawberries and distribute them on the pastry pieces. Prepare the cake icing according to the package instructions with juice and sugar, pour over the particles and let cool. Wash the lemon balm and pat dry. Serve the strawberry Danishes garnished with lemon balm and pistachios.
